The Sharingan bleeds his eyes to red, the deep steady red of crimson blood. Fire can't compete with Sharingan-red, because fire is orange and red and yellow and blue. It's not as pure as the Sharingan is, not as destructive. The flames of Kohona burning reflect in everyone else's eyes, but the red of Itachi's eyes swallow them whole.
